Owner Brian Knox takes a nearly 30-year career in the restaurant industry and combines it with his desire to revive nostalgic food for a broad audience – it’s a fresh look back at savory memories that appeal to not only high-end diners but also high school students, baseball teams, Harley-Davidson motorcycle clubs, and any kid on a bicycle.

Pull off of Paseo de Peralta just before it meets Cerrillos and into modern flashback. Shake Foundation is a roadside joint with outdoor seating, and they’re serving up the classic green chile cheeseburger using their own personal sirloin and brisket blend - no hormones or antibiotics. Lamb and turkey burgers are an even match when it comes to meaty yearnings. But what many say steals the show is the fried oyster sandwich served with red chile mayonnaise and lemon. Yes, that’s butter you taste on those buns.

True to any authentic drive-up, they offer a heavenly array of addictive and amazing shakes, along with their other fountain drinks. These are the best shakes in town! Shake Foundation uses the regional sweetheart, Taos Cow Ice Cream, made with natural and organic milk and eggs. It’s a rich, smooth, and creamy frozen treat, available by the cup, cone, pint or in the Adobe Mud Shakes. Melt for flavors like caramel sea salt with piñon nuts or the lavender shake with real lavender buds. Of course, they have the time-honored flavors of chocolate malt and vanilla, too, for patrons coming from a more classic inclination.
